***Update - I changed the estimated publication time to late 2015 or early 2016. I could've had it done with my original 2014 date, but it wouldn't have been as good. And I'm all about the quality!
You read that right. And it's no joke or clever turn of words either.
I've been on this on again-off again journey with trying to get more vegetables into my family. Maybe you've been there?
I don't want to go vegetarian or vegan, or low fat or anything crazy...I just want to up the veggie count.
If I am to be honest, I have a healthy family. We eat healthier than most families I know, minimize our intake of highly processed foods, etc...and we DO eat vegetables...but just not enough. Really, in the fruit and veggie category, we lean way more heavily towards the fruits.
I've spent years searching for new recipes and recipe books and ideas for incorporating more veggies. The problem with what I find is the recipes I come across have ingredients I can't find, or are collections of salads and veggie loaded soups. Not that I mind soups and salads, they're delicious, but I really want more variety, more ways of including vegetables. I wanted to put more "normal" veggies like spinach, corn, cabbage, etc... on my families plates without having to be a gourmet chef.
So I decided two days ago to invent, find, alter recipes and make my own cookbook. I gave myself two days to talk myself out of it. (Like I really need another big project. :))
Today I still hadn't talked myself out of it. Instead, today I planned out how I would go about it and sketched out a timeline. (Because I'm a bit OC like that) Today I decided, why not? Today I began the process that, according to my newly sketched schedule, should culminate in October of 2014.
